Mount Cinnamon Beach and Wellness Resort, the authentic Caribbean boutique resort – will welcome two of Mexico’s most acclaimed talents —Chef Luis Ronzón and Mixologist Marco Dorantes—for an exclusive pop-up dining event: Sea and Spices.
This one-day collaboration, taking place in the resort’s new Flying Fish restaurant and Chef’s Table, unites the bold, heritage-rooted cuisine of Chef Luis Ronzón with the award-winning cocktail artistry of Marco Dorantes. Together, they’ll craft a vibrant, multi-sensory evening of Mexican-inspired food and drink pairings, set against the breathtaking backdrop of Grand Anse Beach.
Executive Chef at Ixi’im, Chablé Yucatán’s flagship restaurant, Ronzón is celebrated for his ability to weave ancient Yucatecan traditions with contemporary culinary technique. With experience at world-renowned restaurants like Noma and Quintonil, he brings precision, passion, and deep cultural reverence to every dish. While serving as Executive Chef at Chablé Yucatán, the resort was honored with two Michelin Keys. Ronzón has garnered numerous accolades throughout his distinguished culinary career. In 2021, and again in 2024, he was honored by The Best Chef Awards with a One Knife distinction, placing him in the “Excellent” category among top chefs worldwide. Under Ronzón’s leadership, Ixi’im earned consistent recognition as one of Mexico’s finest dining establishments, securing a place on Culinaria Mexicana’s list of the Top 100 Restaurants in Mexico in 2025. Most recently he was awarded the prestigious Best Chef Dubai 2024.

World Class Mexico Champion and icon of Mexico City’s famed Fifty Mils bar, Dorantes is known for his innovative, story-driven cocktails. With a background in global bartending and mentoring through Diageo Bar Academy, Marco creates drinks that surprise and delight with bold flavors and local twists. Accolades includes the Top 20 World Class Berlin Awards.
Guests will enjoy a curated tasting menu where each course is expertly paired with a bespoke cocktail. Expect unexpected pairings, rich storytelling and a fusion of Mexican tradition and Caribbean flair – all delivered through the lens of two master craftsmen working in harmony.
Following the event, Flying Fish will be adding a dish designed exclusively by Chef Ronzon and cocktails by Dorantes, so guests can get a taste of their creations beyond the one-day event.
This will be the first event in a series of exclusive pop-ups running through the year shining a light on Caribbean culinary talent. The next is scheduled for winter 2025.
